411 West’s Rosemary Gin & Tonic

Ring in the New Year with this classic by Trae Smith of 411 West, elevated by rosemary and pomegranate.

1 ½ oz. North Carolina Cardinal gin

3 oz. Fever Tree tonic

¼ oz. rosemary simple syrup (recipe below)

A squeeze of fresh lime juice

Fresh rosemary sprig and 5-7 pomegranate seeds for garnishing

Fill a Collins glass with ice. Add gin, tonic, rosemary simple syrup and lime. Stir gently and add garnish.

Rosemary Simple Syrup

1 cup sugar

1 cup water

Several sprigs fresh rosemary

Bring sugar and water to a gentle boil, stirring, until sugar is completely dissolved. Add rosemary and steep for 10-15 minutes. Remove sprigs and cool completely before using.
